Meat-free eaters rejoice! You can indulge in those tasty summer burgers along with your meat-eating friends. This White Bean Beet Burger is just the recipe to do that with. 

This White Bean Beet Burger recipe is a must in the weekly meal plan because they are so simple to make, quick to prep and loaded with protein and fiber. 

If you’ve been following my blog, you will notice a few posts about beets. Yes, beet season is upon us and I can’t resist a good beet. I am currently growing them in my vegetable garden and adding them to every possible recipe. Hence how this burger was born!

If you are someone who misses a meat-based burger from time to time, I personally think that this burger is a great substitute. Even as I make them, they have a beef like consistency to them. However, I think they are much tastier than a beef burger. 

What are the benefits of this White Bean Beet burger? Well, they are vegan, gluten free, contain only 6 ingredients and packed with protein and fiber! You can taste the wholesome as you bite into them. 

Ingredients 

1 can (19 fl oz) white cannellini beans 

1 ½ cup beets

2 garlic cloves 

1/3 cup fresh parsley

1/3 cup diced onions

2 cups rolled oats 

Salt and pepper to taste 

Instructions

  1. Preheat oven to 350 and prepare a baking pan with parchment paper
  2. Add beans, beets, garlic and parsley to a food processor and process until well combined.
  3. Pour mixture to a large bowl and add onions, rolled oats, salt and pepper and mix well using hands if necessary. 
  4. Using approximately ¼ cup measurement, scoop and roll individual burger patties and place on prepared baking sheet
  5. Place in preheated oven and bake for 20-25 minutes turning over halfway through.
  6. Allow to cool for about 5 minutes before serving.
