All you need is a food processor and these 8 simple ingredients, and you are all set to make these delicious and healthy Cranberry Energy Balls. 

Ingredients

1 cup dried cranberries

1 cup pitted dates

2 cups rolled oats

¼ cup pepitas

1 tsp cinnamon

1 tsp vanilla 

2 TBSP maple syrup

2 TBSP chia seeds 

Instructions

  1. Add cranberries and dates to a food processor and process until a paste-like dough is formed. 
  2. In a large bowl add rolled oats, pepitas, cinnamon, and chia seeds and combine. 
  3. Add cranberry/date past to the oats along with vanilla and maple syrup
  4. Using hands, mix all ingredients together until dough is formed
  5. Scoop by the tablespoon and form individual balls
  6. Store in an airtight container in the fridge for optimal freshness.
