Beat that afternoon slump with these delicious and clean Vanilla Protein Bars. 

For years I have been making these protein bars but a chocolate version of them with this recipe here. However, it has never occurred to me to switch it up for vanilla. Which is shocking because vanilla is my all-time favourite flavour (sorry chocolate lovers!)

I love a nice simple and quick recipe like these Vanilla Protein Bars. They are healthy, vegan, gluten free, packed with protein and only contain 4 simple ingredients.

I love munching on these bars between meals or just after a workout. Additionally, they are kid approved as mine can’t get enough of them. 

Ingredients

  • 1 cup walnuts
  • 1 cup pitted dates
  • 1 tsp vanilla
  • 1 scoop vanilla protein powder

Instructions 

  1. Add all ingredients to a food processor
  2. Blend until a dough-like consistency forms.
  3. Prepare a loaf pan with wax paper and add the mixture into the pan
  4. Firmly press the dough into pan ensuring it is smooth and even. 
  5. Place in freezer for 20 mins or fridge for an hour to firm
  6. Remove from pan and carefully cut into individual bars making approximately 12. 
  7. Store in a sealed container in fridge.
