If you’ve been following my blog, you will notice a few posts about beets. Yes, beet season is upon us and I can’t resist a good beet. I am currently growing them in my vegetable garden and adding them to every possible recipe. Hence how this burger was born!
If you are someone who misses a meat-based burger from time to time, I personally think that this burger is a great substitute. Even as I make them, they have a beef like consistency to them. However, I think they are much tastier than a beef burger.
What are the benefits of this White Bean Beet burger? Well, they are vegan, gluten free, contain only 6 ingredients and packed with protein and fiber! You can taste the wholesome as you bite into them.
Ingredients
1 can (19 fl oz) white cannellini beans
1 ½ cup beets
2 garlic cloves
1/3 cup fresh parsley
1/3 cup diced onions
2 cups rolled oats
Salt and pepper to taste
Instructions
- Preheat oven to 350 and prepare a baking pan with parchment paper
- Add beans, beets, garlic and parsley to a food processor and process until well combined.
- Pour mixture to a large bowl and add onions, rolled oats, salt and pepper and mix well using hands if necessary.
- Using approximately ¼ cup measurement, scoop and roll individual burger patties and place on prepared baking sheet
- Place in preheated oven and bake for 20-25 minutes turning over halfway through.
- Allow to cool for about 5 minutes before serving.
