Ok, so I have jumped on the pumpkin flavour bandwagon. Especially since I have a whole can of pumpkin puree to use up. With that, came the birth of these delicious and healthy Pumpkin Granola Bars. 

What better way to ring in the fall season than a flavourful, kid-approved Pumpkin Granola Bars. That’s right, my picky 5- and 2-year-old even gobbled these bars up without question. 

What are some great features of these granola bars?

  • Quick 

That just names a few! Personally, I think the list can go on and on but rather than reading my list, why not try them out for yourself!

Ingredients 

  • 1 ½ cups rolled oats (GF optional)
  • ½ cup unsweetened shredded coconut
  • ½ cup craisins 
  • ½ cup chocolate chips 
  • ¼ cup pepitas
  • 2 TBSP chia seeds
  • 1 ½ tsp cinnamon
  • 1/3 cup pumpkin puree
  • ½ cup maple syrup
  • ½ cup almond butter
  • 1 tsp vanilla 

Instructions 

  1. Combine all dry ingredients in a large bowl.
  2. In a small bowl mix pumpkin, syrup, almond butter and vanilla.
  3. Pour wet ingredients into dry ingredients and mix well
  4. Spread mixture into an 8×8 baking dish line with wax paper
  5. Press until flat
  6. Place dish in freezer until firm. 
  7. Remove and cut into 16 squares or 8 bars
  8. Individually wrap and store in freezer for best results
