Well folks, fall is just days away which can only mean one thing…pumpkin season! So why not kick off pumpkin season with these healthy Pumpkin Chocolate Chip Muffins. 

It seems pumpkin based items are getting more and more popular each fall. I’ll admit I’m not a pumpkin fanatic although I do thoroughly enjoy pumpkin flavour. 

What do I love about these Pumpkin Chocolate Chip Muffins? Well, they check off many items on my muffin list:

✔️moist

✔️naturally sweetened

✔️kid-friendly

✔️quick and easy

So gear up for all the fall feels with these delicious and healthy Pumpkin Chocolate Chip Muffins. Why not even pair it with a pumpkin spice latte from your favourite coffee shop!!

Ingredients 

2 cups flour

1 ¼ tsp baking soda

½ tsp salt

2 eggs 

1 tsp vanilla 

1 cup pure pumpkin puree

1/3 cup coconut oil (melted)

½ cup + 4 TBSP honey

½ cup chocolate chips 

Instructions 

  1. Preheat oven to 325° F and line a muffin pan with liners.
  2. In a bowl, sift together flour, baking soda and salt 
  3. In another bowl beat eggs. Stir in pumpkin, vanilla, oil, and honey. 
  4. Stir dry ingredients into pumpkin mixture until combine. Fold in chocolate chips.
  5. Pour the batter into all 12 prepared muffin liners.
  6. Bake in preheated oven for 20-23 minutes (depending on oven) or until cake tester inserted comes out clean.
  7. Let muffins cool on rack for 15 minutes and enjoy!
