These healthy no-bake Chocolate Almond Bars are a healthy dessert the whole family will love. 

They are crunchy yet chewy, super simple to make and taste amazing. 

They’re chocolatey, they’re almondy, they’re sweet but the dark chocolate provides just the right amount of bitter to offset the sweet!

For this No-Bake Chocolate Almond Bars recipe, I use my Almond Butter recipe as previously posted.

Ingredients

1 ¼ cup almond flour

¾ cup almond butter

2 TBSP shredded unsweetened coconut

1/3 cup honey

1 tsp vanilla

½ cup rice cereal (I use colourful ones for the kids!)

1 cup dark chocolate chips melted 

Instructions 

  1. In a medium bowl combine almond flour, almond butter, coconut, honey, vanilla and rice cereal and mix until well combined
  2. Add wax paper to an 8×8 pan 
  3. Pour mixture in to pan and firmly press down until evenly distributed 
  4. Place in freezer for 15 minutes
  5. Meanwhile melt chocolate chips in the microwave for 20-30 seconds at a time stirring in between until melted. 
  6. Remove mixture from freezer and gently spread the melted chocolate over the mixture until it completely covers it. 
  7. Place back in the freezer for another 15 minutes and then cut into approximately 12 bars. 
  8. Store in freezer for best taste and consistency but you can also store in refrigerator if preferred.
