If you are celebrating Cinco De Mayo or just looking for a great summer salsa, try out this Mango Salsa recipe. 

This Mango Salsa essentially has all my favourite things. Of course, tomatoes, certainly avocado, cilantro (oh how I love cilantro!) and best of all MANGO!!! The combination of flavours is so fresh and satisfying. When you bite into it you can taste the healthiness!! I love when food does such things. 

I love this salsa because it has many hats. Obviously, you can dip chips in it. Secondly, it goes great on toast or bread! Thirdly, my hubby loves to put it on his grilled fish (for those who eat it). Finally, you can add it to any sandwich or pita for some extra zest!

A few benefits of this Mango Salsa includes that it is vegan, gluten free, clean and super easy to make!

Ingredients 

1 mango diced

1 avocado diced

4 medium tomatoes diced

½ cup fresh cilantro

2 cloves garlic minced

1 tsp salt

2 tbsp fresh lemon juice

¼ cup red onion

3 TBSP olive oil 

Instructions 

  1. In a medium bowl combine mango, avocado, tomatoes, cilantro & garlic
  2. Stir in salt, lemon, red onion & olive oil 
  3. Refrigerate for 30 minutes before serving 
  4. Enjoy!
