Have you ever walked into the mall and was hypnotized by the smell of cinnamon buns baking in the food court? Well, this recipe will take you back to that moment. The best part is this is healthy and completely natural, unlike those extremely guilty pleasures. I typical enjoy this pudding for breakfast but it would also be a great midday snack or even a guilt free dessert! Whichever way you choose to eat it, it won’t disappoint! With the ‘super seeds’ chia, it will provide you with protein, fiber, antioxidants and omega-3 fatty acids. Its sweet yet natural flavour from the dates make it kids approved. If you love cinnamon like me then this will be a dish worth waking up for. I like to make this pudding the night before so that it is ready to ‘grab and go’ in the morning for breakfast! Go ahead and try it yourself!

Ingredients

1 cup almond milk (or milk of choice)
¼ cup chia seeds
1/2 tsp cinnamon
4-5 pitted dates

Instructions

  1. Add almond milk, cinnamon and dates to a blender and blend well until dates are no longer chunky.
  2. Transfer to a mason jar and add in the chia seeds.
  3. Stir well and let sit for about 20 minutes.
  4. Stir again and refrigerate
  5. Leave in fridge for at least an hour or overnight if time allows.
