As a vegetarian and a mother, I am always looking for a quick, easy, healthy and delicious vegetarian dish to feed my family. This Cheesy Black Beans Skillet recipe captures all those things. 

First, it only takes 10 minutes or less to make which is critical in my busy kitchen. Second, it only requires 6 ingredients all of which you likely have in your household. Third, it is high in protein, fiber and is meatless. Some might say it is the perfect ‘Meatless Monday’ dish. Finally, this Cheesy Black Beans Skillet Recipe is yummy to my tummy! 

I like to call it the ‘easy’ Cheesy Black Beans Skillet recipe because it requires minimal thought and energy. This kind of recipe is crucial in your meal rotation. It only has one pot (aka the skillet) to clean at the end of the meal. 

The taco seasoning gives it an extra umph that really takes a simple black bean to the next level. What I also love about this recipe is that it is gluten free. If you choose to add it to a tortilla or taco shell, by all means! However, I love this dish just the way it is. Also, if you are looking to cut back on carbs or gluten then this is the perfect dish for you!

Ingredients 

1 can black beans drained and rinsed 

¼ cup onions chopped

1 red pepper chopped

¾ cup marble cheese

Fajita seasoning

Instructions

  1. Heat 1 TBSP of olive oil to a medium-large sized skillet over medium-high heat.
  2. Add chopped onions and red peppers to the skillet and cook about 3-5 minutes until onions become soft
  3. Add black beans and stir for another minute 
  4. Sprinkle fajita seasoning to taste
  5. Once evenly distributed add cheese on top and cook on low until cheese is melted
  6. Serve immediately
