It doesn’t matter how much time I have in the morning, there simply is never enough! I believe that is why breakfast is the most skipped meal for people. Of course, we all know this is a major diet no-no because breakfast is the MOST important meal of the day. Hence why I love this Raspberry Chia Pudding!

This Raspberry Chia Pudding (Like all chia puddings) is a great recipe for meal prep! I often make a few jars of this on Sunday night, so my family and I have something to grab and go in the morning. 

The hands-on time for this recipe is less than 5 minutes. Most importantly, it is healthy, it is gluten-free and vegan! Did I also mention how deliciously satisfying it is? 

I am very particular about more morning meal because I have trouble finding something that holds me over for a decent amount of time. However, this Raspberry Chia Pudding certainly does the trick.

So stop struggling with what to eat for breakfast in the morning. Or even worse, stop skipping breakfast! Try out this Raspberry Chia Pudding instead.

Ingredients

1 cup unsweetened almond milk

4 TBSP chia seeds

2 tsp honey (or a vegan alternative i.e. syrup)

1 tsp vanilla 

2 TBSP unsweetened shredded coconut

1 cup fresh raspberries 

Instructions 

  1. In a bowl mix almond milk, chia seeds, honey, vanilla, and coconut. 
  2. Let sit for about 20 mins and then stir again. 
  3. In a mason jar or glass container sprinkle enough raspberries to cover the bottom of the jar. 
  4. Pour approximately ¼ cup of the chia mixture on top of the raspberries
  5. Sprinkle more raspberries and add more chia mixture
  6. Continue this process until both are used up. 
  7. Top with raspberries
  8. Refrigerate for another 20 minutes and enjoy!
