Looking for a delicious gluten-free pesto pasta? Try this Pesto Zoodles recipe. If you don’t know, what zoodles are they are Zucchinis spiralized into noodles.

I love this recipe for so many reasons. First, it tastes like pasta but doesn’t give me that bloated feeling afterwards like pasta does. Second, it is ready in a jiffy. Third, it is insanely easy. Lastly, it is clean eating in true form. In fact, this entire dish (cheese aside) comes straight from my garden!

Pesto Zoodles

Ingredients

2-4 zucchinis spiralized 

Garlic salt to taste 

2-4 TBSP pesto 

Parmesan cheese or vegan substitute to taste 

Instructions 

  1. Oil and heat a non-stick pan and add the spiralized zucchini noodles
  2. Add garlic salt to taste 
  3. Cook 2-3 minutes and then add pesto
  4. Cook another 2-3 minutes until pesto is evenly distributed and becomes fragrant 
  5. Remove from heat and add cheese and serve immediately
