The queen of snacks strikes again! If you follow my blog at all you will know I LOVE all things snacks. As a result, this Healthy Butterfinger Bars recipe excites me to my core every time I make it. Providing healthy and easy recipes for you is my priority and these bars succeed at both.

With only 4 ingredients, minimal hands-on time and zero bake time these Healthy Butterfinger Bars are a staple in my snack book. They taste exactly like a Butterfinger Bar except its healthy! Furthermore, they have no refined sugar, vegan AND gluten-free options. 

So, if you are someone with a sweet tooth that tends to raid the cupboards for such things at certain times of the day than this is the perfect recipe for you! It takes no time at all, and no equipment required! All you need is an 8×8 pan and a bowl for mixing! 

Ingredients

3 cups crunchy (GF if needed) cereal (I used Life but Chex is another great option!)

½ cup natural peanut butter

½ cup honey (or vegan liquid sweetener of choice)

1/3 cup melted dark chocolate of choice

½ tsp vanilla (optional)

Instructions 

  1. Add cereal, PB, honey and vanilla (if using) to a bowl and mix gently using a spatula until all cereal is covered. 
  2. Place a piece of wax paper on an 8×8 baking pan
  3. Evenly distribute mixture in the pan and place in the freezer for 15 minutes to allow it to set. 
  4. Meanwhile, melt the dark chocolate in the microwave for 30 seconds at a time stirring in between until completely melted.
  5. Drizzle the melted chocolate once the bars are set and place back in freezer for another 20-25 minutes. 
  6. Cut into 16 squares and store in a Tupperware container in the freezer. They tend to be crumbly, therefore the freezer is the best place to keep them! 
  7. Enjoy!
