I absolutely hate wasting anything. So when bananas are going ripe on the counter and no one wants them, I turn to banana bread to use them up. 

This Healthy Banana Bread recipe is insanely easy with only 7 ingredients. Hands-on time is 10 minutes at most. Best of all, you won’t feel guilty serving it to your family for breakfast or snack because its refined sugar-free

I love heating my banana bread up and spreading some Homemade Peanut Butter on top of it. Banana and peanut butter are always my favourite combination. 

So try out this recipe if you have guests coming for the weekend or simply need a quick and easy breakfast!

Ingredients 

2 cups all-purpose flour

1 ¼ tsp baking soda

½ tsp salt

2 eggs (at room temp)

3 ripe bananas mashed

1/3 cup coconut oil 

½ cup + 4TBSP honey

Instructions

  1. Preheat oven to 325 degrees F and spray a 9 by 5-inch loaf pan with cooking spray. 
  2. In a bowl, sift together flour, baking soda and salt
  3. In another bowl, beat eggs. Stir in mashed bananas, oil, and honey.
  4. Stir dry ingredients into banana mixture until combined. 
  5. Pour Batter into prepared loaf pan and bake in preheated own for 1 hour or until cake tester inserted in center comes out clean. 
  6. Let pan cool on rack for 15 minutes. Then gently remove from loaf pan by running a knife around the loaf. 
  7. Let cool on rack before serving.
