I am a big salad girl. But not just the leafy kind. I love salads of all types. That’s why I love this Fresh Lentil Salad recipe. 

I love how lentils can soak up so much flavour which makes it a good candidate for a salad in my books. The Lebanese Lemon Salad Dressing makes it taste extra fresh. I use this dressing on my Fattoush salad, but it also tastes amazing on this Fresh Lentil Salad. 

As garden season kicks off, I love adding fresh herbs from my garden to many of my summer recipes. I have a tough time choosing my favourite herb. However, parsley is my favourite salad/vegetable herb. 

This Fresh Lentil Salad is simple yet delicious. It is vegan, gluten-free, clean ingredients and can be easily modified to your liking. It is also an excellent meal prep recipe that can be used multiple times throughout the week. The best part is, the longer it soaks in the dressing the better it tastes.

Ingredients

1 can of lentils drained and rinsed 

1 tomato diced

½ cucumber diced

½ orange pepper diced

¼ cup fresh parsley chopped

Lebanese Lemon Salad Dressing Recipe

Instructions 

  1. In a large bowl add all ingredients 
  2. Sprinkle the mint from the Lebanese Lemon Salad Dressing recipe on first 
  3. Add the Lemon Dressing and mix well
  4. Chill in fridge until ready to serve

**Notes

** I use only 1 TBSP of mint for this recipe rather than 2 TBSP as the Lemon Dressing calls for
