If you have been following my blog this week you will notice that there have been multiple energy and protein ball posts. You will also know that I am the queen of snacks! Thus, playing around with energy ball recipes brings me great joy because I am always looking for a different snack to feed my kiddos or indulge in for myself.
I personally like to have these Coffee Crunch Energy Balls before a workout to get a little shot of energy to make that workout extra hard.
Ingredients
1 cup of rolled oats
2 tsp ground espresso
¼ cup rice cereal
¾ cup natural peanut butter
1/3 cup maple syrup
1 tsp vanilla
2 TBSP chia seeds
Dark chocolate for coating
Instructions
- In a medium bowl add oats, espresso and rice cereal and mix
- Add peanut butter, syrup, vanilla, and chia seeds and mix well.
- Refrigerate for 15 minutes to firm.
- Roll into individual balls by the tablespoon
- Melt a small amount (I used 4 small squares and had leftover) of dark chocolate in the microwave 20 seconds at a time until melted
- Using a spoon drizzle the chocolate over the protein balls
- Place in a seal tight container and store in fridge.
