It’s dairy-free and easily made vegan by swapping out the honey for a vegan sweetener. Furthermore, its quick and easy!
How to make Coconut Blueberry Chia Pudding
Ingredients
1 Tbsp unsweetened shredded coconut
2 Tsp honey
1 Tsp vanilla
5 Tbsp chia seeds
¼ cup of blueberries
1 cup unsweetened Coconut milk
Instructions
- In a mason jar combine coconut, honey, vanilla, chia seeds and coconut milk.
- Mix well and let sit for approximately 20 minutes to allow chia seeds to set.
- Stir again and add in the blueberries throughout the mixture.
- Refrigerate for 30 minutes.
- Add more blueberries on top and serve!
