As summertime is quickly approaching, I love to have quick, easy, and healthy dips on hand for a poolside snack. This Beet Goat Cheese dip is one of my summer favs!
For me, this dip is the marriage of two of my favourite items. Beets have become a recent obsession of mine. I have been planting them in my garden each year and I absolutely love adding them to everything and anything. Although the beets in this recipe certainly don’t need to be garden fresh. You can purchase them by the bag, individually or even jarred. All options will be just fine especially depending on the availability and time of year.
As for goat cheese, I mean need I say more? I am a big cheese person, so I always find it difficult to rank my cheese preferences, but goat cheese is in my top 5.
I love this Beet goat cheese dip because it has so many functions. It has a sweetness to it that it would be delicious dipped with fruits or plain cookies. Alternatively it also tastes great with vegetables and crackers. Lastly, if you mix it with a bit of oil, it would be perfect for a summer salad.
The best part of this Beet Goat Cheese Dip is it is only 2 ingredients! You can’t beat that. Not to mention it only takes 3 minutes to make and zero bake or wait time. Just blend it and serve.
Ingredients
¾ cup goat cheese
½ cup red beets
Instructions
- Simply blend the ingredients in a food processor until the dip is smooth or reaches desired consistency
- Store in a glass sealed container and store in the fridge for up to 5 days.
