As spring slowly enters and summer is soon approaching, there is nothing I like better than a good old fashion Fruit Salad. It is obviously healthy, always refreshing and such a crowd pleaser, especially with my kids. Not to mention I can use whatever I have in my fridge, make a big batch, and serve it for the next few days! It is a quick and easy snack. 

Although Fruit salad can be more than just a snack. I like to spin this healthy recipe as a dessert to my kids which works every time because it is so darn sweet. You can serve it with some ice cream or yogurt and call it a treat! 

Fruit salad is also a good way to use up fruit before it goes bad. Is your family like mine where they love something one week and the next week that same product will go rotten because nobody wants it? I find this to be true for various fruit. So, my solution, make fruit salad!

The simple and fresh dressing helps to preserve the fruit but also adds an extra yum factor to it. I love adding cinnamon to things but especially to fruits. 

Yet another thing I love about fruit salad is you can make it custom to you. If you have picky eaters in the family you can leave out certain fruits. However, I find once it has the dressing on it and mixed with other fruits my kids will eat the whole bowl whether they like those particular fruits that week or not. 

So go ahead and raid your fridge or counter and get ready to slice and dice your fruit into a healthy and tasty fruit salad for the week to come. It is great to put in lunches, have as a snack or have for an after-dinner treat. 

Ingredients

1 apple sliced and diced

Large pear sliced and diced

1 cup blueberries

10-12 strawberries cut into quarters 

Dressing

½ lemon squeezed

1 tsp honey 

¼ tsp cinnamon 

Instructions 

  1. Wash and prepare all fruit and add it to a large bowl
  2. In a separate small bowl mix the lemon, honey and cinnamon.
  3. Pour the dressing over the fruit and mix until evenly distributed 
  4. Store in fridge for 3-5 days but I promise it won’t last that long!
