I’m all about simple and delicious. This high protein Edamame Toast is exactly that. The cilantro Edamame Dip is a perfect friend to a dry piece of toast. Slap on a garden-fresh slice of tomato and you’ve got yourself a gourmet toast!

The Cilantro edamame dip packs the protein for this toast. While the tomato adds the antioxidants. Lastly the chia seeds and multigrain bread bring the fiber! And that’s just to name a few of the many benefits. 

Outside of the health benefits the next best thing about this Edamame Toast is that it is super quick, insanely easy and leaves you satisfied. 

I love to eat this toast for breakfast with some fruit or as my after-workout snack. How and when you eat it is your call.


What you will need:

  • Slice of toast: this can be any healthy multigrain bread of your choice. I like to use the Stonemill brand multigrain rye bread
  • Cilantro Edamame Dip: This quick, easy and healthy dip can be found here. It is packed with protein and oh so yummy
  • Tomato: I used ‘tomato on the vine’ and seeded it. My toast was on the smaller side and tomato was larger so I only used about ¼ of the tomato to ensure it fit on the toast!
  • Chia Seeds
  • Sea salt

Ingredients

Slice of toast of choice (I use Stonemill multigrain rye bread)

2 TBSP Cilantro Edamame dip

¼ tomato diced 

Sprinkle of chia seeds 

Sprinkle of sea salt 

Instructions

  1. Spread a heaping amount of Cilantro Edamame dip on the piece of toast
  2. Add diced tomatoes 
  3. Sprinkle chia seeds and salt 
  4. Add desired fruits on the side
