Avocado toast is such an easy and healthy meal or snack option. It requires minimal brain energy and prep time, and it is so delicious. I love how easy it is to make this toast with so many different variations. My current favourite Avocado Toast recipe is drizzled with Cilantro Yogurt Sauce

Avocado already offers such a fresh flavour but when you pair it with this Cilantro yogurt sauce it tastes extra fresh and extra tasty. 

Of course, the health benefits of avocado toast are superb.  It is high in fiber, low in cholesterol and a good source of protein particularly on account of the Greek yogurt.  If you add in some fixings to balance out the meal like I did, the hard-boiled egg provides an excellent protein source.

Ingredients 

Toast of your choice ( I use Stonemill multigrain rye bread)

½ avocado

Drizzle of Cilantro yogurt sauce

Sprinkle of chia seeds 

Instructions

  1. Cut the half of avocado lengthwise and 4-5 slices by width
  2. Add avocado slices to toast 
  3. Drizzle approximately 1-2 TBSP of Cilantro yogurt sauce on top 
  4. Sprinkle with chia seeds and side with a hard boiled egg and some fruit for a well balanced meal
