As the warm weather approaches one of my favourite dinner dishes is a fresh Vegan Power Bowl. I prefer mine to be cold which makes this dish even more enticing in the summer. This bowl is fresh, colourful and loaded with vegan protein. As a result, it is pleasing to the eyes, mouth and stomach. 

This protein loaded Vegan Power Bowl is a great dish to make if you are in a rush. It is even better if you are doing a batch of meal prep. I make mine for dinner and then make enough for lunches the next day. Without a doubt, this dish is a major win because it goes a long way!

Furthermore, I love how versatile a power bowl can be. I love colourful veggies, multiple proteins, a big scoop of hummus in the middle and topped with fresh herbs. Not to mention that this dish stays true to its name of “power bowl”. It certainly fills me up and keeps me full and energized.

Ingredients

**This recipe serves 2-3 people comfortably**

1 red/orange/yellow pepper cut into chunks

1 carrot grated or peeled into strips

1/2 cup of red beets sliced

1/2 cup of cooked edamame

1 cup of chickpeas drained and rinsed

1 cup of Kale chopped

handful of fresh herbs such as cilantro or parsley

1 heaping spoon of hummus per bowl

1 cup of cooked rice

Instructions

  1. Prepare all ingredients by washing and chopping and set aside
  2. Once rice is cooked, allow to cool before distributing into individual bowls.
  3. Top with veggies, protein, herbs and a dollop of hummus in the centre.
  4. Before taking your first bite mix it all together so you taste all the incredible flavours!
  5. Enjoy!
