There is nothing more enticing to me than a cold, fresh Summer Coleslaw Recipe. In my opinion, it goes well with anything that goes on the BBQ. Of course, it is perfect to bring to a summer potluck because it goes a long way.
The unique factor in this Summer Coleslaw Recipe is that I use a bag of regular coleslaw (cabbage) and a bag of broccoli slaw. When you add in the nuts and dried fruits along with the dressing it is the perfect combination of sweet and tangy.
I like to let this marinate for at least an hour but overnight if it is possible so that it can really soak in the dressing. Aside from the marinating time, the hands-on time for this salad is less than 5 minutes. You can’t beat that!
You can buy the packages of coleslaw and broccoli slaw in the cold lettuce section at the grocery store. I occasionally have difficulty finding the broccoli slaw but it’s generally easy to find.
Ingredients
Coleslaw
1 bag of coleslaw cabbage
1 bag broccoli slaw
½ cup pumpkin seeds
¾ cup dried cranberries
½ cup roasted almonds (optional)
Dressing
½ cup olive oil
¼ cup white vinegar
3 TBSP honey
Instructions
- Add all coleslaw ingredients to a large bowl
- In a small bowl mix the dressing ingredients together well
- Pour dressing over the salad and mix well
- Refrigerate for at least 1 hour or overnight.
- Serve chilled!
