August has begun which only means one thing in Ontario, Tomato season! The tomatoes in my garden pop up daily. So what shall I do with these massive tomato hauls? How about make some delicious Roasted Tomatoes?

The great thing about Roasted Tomatoes is you can add them to so many dishes. It obviously tastes great on pasta for a main dish. It is amazing on fresh bread or to add to garlic bread. To be perfectly honest I like to eat them on their own! But that’s your call.

So hit up a fresh farmers market or take a gander into your own vegetable garden and pick out those tomatoes that are ready to eat! I also picked some basil and garlic while I was at it. 

What I love most about garden season is this entire recipe (olive oil aside) is grown and picked by yours truly!

I must warn you the aroma that is created from these Roasted Tomatoes is phenomenal!! 

Ingredients

3 cups  halved cherry and grape tomatoes 

2 clove garlic minced

6-8 leaves of fresh basil

2 TBSP olive oil

Instructions 

  1. Preheat oven to 400 degrees 
  2. In a 9×13 glass baking dish mix all ingredients and spread evenly through dish
  3. Put tomatoes in oven and roast for 30 minutes flipping them about halfway through
  4. Allow to cool a few minutes before serving.
