Hummus has always been a comfort food for me which is quite convenient because it is soooo healthy and wholesome. Without a doubt I eat hummus on the daily. As a result, I find it much more cost effective to simply make my own. Once I got the hang of making my own hummus I began experimenting with different “add-ons” and I would say this recipe probably tops my list. The flavour combo is like a match made in heaven. My 4-year-old son even likes to gobble this up with veggies which is a mom win! Thus, if you are a looking for a good dip for veggies or a spread for you sandwiches then you have come to the right place!
Ingredients
1 cup chickpeas drained and rinsed
½ large garlic minced
½ large lemon squeezed
½ cup feta
2 TBSP fresh parsley
½ cup of roasted red peppers
1TBSP tahini
2TBSP olive oil
Instructions
- In a food processor add chickpeas and garlic and blend for about 30 seconds.
- Add in the remainder of ingredients and blend until it reaches desired consistency ensuring that all ingredients have been equally blended. Use a spatula about halfway through to scrape the sides and mix around the dip to ensure it blends equally.
- Store in a sealed container for up to 5 days in the refrigerator.
