With summer weather here there is nothing I want more than a good cold salad. I essentially live off salads in the summer with my vegetables coming fresh from the garden! This Mediterranean Chickpea Salad is a combination of all my favourite things!
It might be the Greek in me but I could eat Kalamata olives and feta cheese morning, day and night. I love the salty flavour each add to this Mediterranean Chickpea Salad.
Chickpeas are my favourite go-to for salads because they don’t get mushy, yet they soak in the flavour. Of course, they add fiber and protein for a vegetarian dish.
I love to watch my garden get taken over by tomatoes. It might be my favourite thing to add to salads. The cucumbers add a fresh and crunchy compliment to the sweet and firm tomatoes.
The dressing on this Mediterranean Chickpea Salad is light and super simple. What I love most is there is no pre-mixing necessary. Just put everything on at once and mix all together.
This is a great recipe to use for a summer potluck or a family BBQ. It keeps well, makes a large amount and easy to prep!
Ingredients
1 can chickpeas drained and rinsed
½ English cucumber chopped
2 tomatoes chopped
¼ cup kalamata olives
¼ cup feta
3 TBSP olive oil
2 TBSP Wine Vinegar
½ tsp dry oregano
1 tsp garlic powder
Salt and pepper to taste
Instructions
- Add chickpeas, cucumber, tomatoes, and olives in a large bowl
- Sprinkle oregano, garlic powder, salt and pepper over the salad
- Add oil and vinegar and mix
- Top with crumbled feta and mix more if desired
- Chill in fridge for 30 minutes and serve
