Muffins fly off the shelf in my household. So, it is critical for me to make a healthy and nutritious muffin. However, it is not always easy to find a muffin recipe that isn’t packed with processed sugars yet still tastes amazing and moist. Well, you can stop looking because these Healthy Date Oatmeal Muffins are here to the rescue.

This recipe certainly does not sacrifice flavour for health. I mean it when I say they are delicious, moist, and even filling! Not to mention, they are packed with fiber and naturally sweetened with honey and dates.

What You’ll Need

  • Rolled oats
  • Boiling water
  • Margarine 
  • Honey
  • Vanilla
  • All-purpose flour
  • Baking soda
  • Salt
  • Cinnamon 
  • Chopped dates 

That’s it! Only 10 simple ingredients that likely already have a home inside your cupboards. So give yourself (or family) a muffin you don’t have to feel guilty about with these Healthy Date Oatmeal Muffins.

Ingredients 

1 cup rolled oats

1 ½ cups boiling water

½ cup margarine

1 tsp vanilla

¾ cup honey

1 cup all-purpose flour

1 ½ tsp baking soda 

¼ tsp salt

1 tsp cinnamon

1 cup chopped pitted dates

Instructions 

  1. Preheat oven to 325 degrees and line or grease 12 muffin tins 
  2. Using a small bowl, combine oats and boiling water; let stand until cool
  3. In another bowl, combine flour, baking soda, salt and cinnamon. Set aside.
  4. In a large bowl cream margarine and add vanilla
  5. Add flour mixture, rolled-oats mixture and honey and combine. 
  6. Stir in chopped dates. 
  7. Pour mixture into 12 lined muffin tins evenly and bake in preheated oven for 22-25 minutes (depending on oven) until a cake tester inserted into the centre comes out clean.
  8. Allow to cool completely before storing. 

***Notes

  1. The muffins may start to turn golden brown on top which is completely normal. It is the result of the honey. Do keep an eye on them for the last few minutes to ensure they don’t burn.
