Don’t you love when you can snack on something that tastes like a guilty pleasure but is whole, healthy, vegan and gluten free? Chocolate lovers indulge because this is the recipe for you! These satisfying protein balls almost remind me of a peanut butter cup but an extremely healthy twist on them! They are easy to make, easy to store and easy to eat! They are a great breakfast on the run, mid day snack, or dessert after dinner. Who doesn’t like such a versatile recipe. The only problem is you can never make enough of them because they get eaten up so darn quickly!

Ingredients

2 cups rice cereal

6 TBSP oats

2 TBSP cocoa powder

2 TBSP chia seeds 

½ cup natural chunky peanut butter

1/3 cup honey (can be swapped for maple syrup if vegan)

1 tsp vanilla 

Instructions

  1. In a large bowl mix the dry ingredients until well combined
  2. In a microwave safe bowl add peanut butter, honey and vanilla
  3. Put in microwave for 20-30 seconds (depending on microwave), just enough to make it easy to combine.
  4. Remove from microwave and stir well. 
  5. Add wet ingredients to dry and combine well. 
  6. Wet your hands slightly and form balls using approx. 1TBSP of dough at a time. Tighten the dough between your hands to make it easier to handle and then roll into a ball.
  7. Place in sealed container and put in fridge until ready to eat!
