Between morning, afternoon and bedtime snacks, there are a lot of snacks I need to have on hand for my family. Therefore, these Banana Coconut Energy Bars were created! 

There isn’t much to say about these either than they are healthy, easy, quick and delicious! 

These Banana Coconut Energy Bars require no oven, they are refined sugar-free, and even vegan. 

So if you are looking to fill a snack time or just need a new energy bar recipe give these tasty bars a try! 

Ingredients

1 ½ cups rolled oats

1 ½ cups rice cereal 

¼ cup unsweetened coconut

¼ cup chia seeds

½ cup pepitas

1 large banana mashed

6 TBSP natural peanut butter

1 TBSP coconut oil melted

3 TBSP honey (or maple syrup)

1 tsp vanilla

¼ tsp salt

¼ cup dried cranberries 

Instructions

  1. Add wax paper to an 8×8 or 9×9 baking pan and set aside.
  2. In a large bowl mix the oats, cereal, coconut, chia seeds and pepitas. Set aside.
  3. In a microwave safe bowl add peanut butter, coconut oil, and honey. 
  4. Put in microwave for 20-30 seconds and combine well. 
  5. Add vanilla and mashed banana to the liquid mix and pour on top of the dry mix and combine. 
  6. Add dried cranberries and gently mix until evenly distributed
  7. Pour mix into the prepared baking pan and firmly press down until even. 
  8. Place in freezer for up to 15 minutes. 
  9. Remove from pan and carefully cut into 10-12 bars and store in an airtight container in the freezer.
