I love any type of stuffed vegetable. I think it is such a clever way to serve a meal. Meanwhile it sneaks in all the crucial food groups. These Black Bean Stuffed Peppers are my delicious stuffed vegetable of the week. 

With summer here and grilling season in action, I love to bring all my cooking out to the BBQ. Thus, these Black Bean Stuffed Peppers are deliciously grilled. 

These peppers are packed with protein, fiber, and wholesome ingredients. They have a Mexican flavour to them and perfectly topped with some fresh cilantro. 

I use them as my main dish, but they are a perfect side or even appetizer for when company is over. 

A major mom-win is when you can add a recipe to another recipe. For these Black Bean Stuffed Peppers, I simply stuff them with my pre-existing Cheesy Black Bean Skillet Recipe to make my life much easier! 

All you have to do is throw them on the grill for 10 minutes and they are ready to eat! So if you are looking for healthy, vegetarian, delicious and easy, this is the perfect recipe for you!

Ingredients 

Bean mixture:

For the peppers:

2 peppers (yellow, red or orange) cut in half with stems and seeds removed 

1 TBSP of olive oil 

top with fresh cilantro

Instructions 

  1. Cook Cheesy Black Bean Skillet according to recipe until step 4.  
  2. Brush oil all over peppers
  3. Spray a grilling pan with non-stick spray 
  4. Place peppers on grilling pan 
  5. Remove bean mixture from stove top and mix shredded cheese in bean mixture
  6. Stuff each pepper with the bean mixture. 
  7. Grill on BBQ for approximately 10 minutes or until peppers reach desired consistency 
  8. Add cilantro and serve!
