There is nothing better than a fresh, juicy tomato in the summer! Ok, there is one thing better, Tomato Salad! My garden is planted and as I await my tomatoes, I have a luscious basil plant that I will use for my fresh Tomato Salad.

This tomato salad is a staple side dish in our Mediterranean household. I will say, there is always controversary around how exactly the tomatoes should be cut for this salad. I say it is strictly preference based. However, my preference is to cut them in half from core to bottom. Followed by cutting those halves into 4 or 5 slices from core to bottom as well. Simply because I find this cutting method easier to pick up with a fork and it looks pretty!

I am always so proud of my summer gardens because it makes me feel so productive in my cooking. It is also a great cost savings with the rising cost of groceries. Not to mention, I love the concept of living off my land! 

So, I wander out to my garden and pick my garden-fresh basil. Soon I will also be able to pick out my tomatoes for this recipe as well. 

The fresh basil in this recipe makes it taste extra wholesome and delicious! I love how simple this side salad is and how perfect it compliments any summer meal. 

Of course, it is strictly plant-based and contain clean ingredients. So, if you are tired of your usually lettuce salad than try out this yummy Tomato Salad recipe.

Ingredients 

4 tomatoes cut in half and sliced from top to bottom

6-8 leaves of fresh basil chopped

2 TBSP olive oil 

1 TBSP balsamic vinegar 

Garlic powder to taste 

Salt and pepper to taste

Instructions 

  1. Cut each tomato in half and then slice into about 4 or 5 moon shaped slices of each half cutting from top of half tomato to bottom.
  2. In a medium bowl add cut tomatoes, basil, garlic, salt and pepper. 
  3. Drizzle olive oil and vinegar and mix. 
  4. Serve immediately or chill in fridge until ready to serve.
