This Detox Vegetable Soup is always my go-to when I need a nice hearty yet light meal after a stint of over-indulging. I can eat this soup every day for a month and never get tired of it. The combination of vegetables and herbs makes this soup extra delicious and super nutritious.
What are the benefits of this soup you ask? It is high in protein, high in fiber, completely plant based, and gluten-free! Just to name a few. Therefore, if you are looking to eat healthy this week or month or just for today then this Detox Vegetable Soup is the recipe to try.
This soup is such a quick and easy go to when life is busy. In addition, I love its ‘freezability’ factor, as I like to call it. I tend to divide mine into single serving containers and freeze them so I can take them out for individual lunches. Furthermore, this soup is great for feeding the masses!
Lastly, I love how in this Detox Vegetable soup anything goes. In other words, if you are looking to use up veggies that may go funky in your fridge soon then throw it into this batch.
Ingredients
- 1 TBSP olive oil
- 1 Onion diced
- 1 carrot, diced
- 1 stalk celery, diced
- 1 tsp salt
- Pepper to taste
- 2 cloves garlic, minced
- 2 TBSP red wine vinegar
- 4 cups Vegetarian Broth
- 1 bay leaf
- 2 cups butternut squash chopped
- 1 can diced tomatoes
- ½ cup quinoa
- 1 tsp dried basil
- 1 Tsp dried oregano
- 1 can chickpeas
- 2 cups spinach, chopped
Instructions
- In a large saucepan, add oil and heat over medium/high heat. Add onion, carrot, celery, salt and pepper. Cook approximately 5 mins until onions are translucent.
- Add garlic and red wine vinegar and cook for another minute.
- Stir in broth and bay leaf and bring to a boil.
- Stir in the squash, tomatoes, basil and oregano.
- Reduce heat to simmer and cook for 15 minutes or until quinoa is translucent.
- Add chickpeas and spinach and cook for an additional 5 minutes.
- Serve and enjoy!
