I love this recipe because they are quick and easy to make and perfect to grab on the go for breakfast or snack time. They are healthy, contain no processed sugars, high in fibre and delicious.
I like to change up the last 3 ingredients with other types of dry fruit or nuts. Therefore, feel free to add and swap whatever you would like for the add-ons.
So, if you are looking for some meal prep ideas for those breakfasts on-the-go, especially with school starting up again, try these Healthy Oatmeal Breakfast Cookies.
Ingredients
- 1 cup flour
- 1 ½ cup oats
- 1 tsp cinnamon
- ½ tsp salt
- 1 tsp baking soda
- 2/3 cup coconut oil melted
- ½ cup honey
- ½ large banana mashed
- 1 tsp vanilla
- 1 egg
- ½ cup craisins
- ¼ cup pepitas
- ½ cup chocolate chips
Instructions
- Preheat oven to 350 degrees and line baking sheets with parchment paper
- In a medium bowl mix the dry ingredients and set aside
- In a large bowl mix oil, honey, banana, vanilla and egg until well combined
- Add dry ingredients to wet ingredients and mix well.
- Gently fold in craisins, pepitas and chocolate chips.
- Scoop dough by the tablespoon onto the prepared baking sheets.
- Place in preheated oven for 10 minutes.
- Allow to cool for 2-3 minutes before transferring to a wire rack.
- Store in a seal tight container for up to 5 days. Store in the freezer for up to 3 months.
