Beets are always my first purchased seed for my vegetable garden. I absolutely love beets in any form! So, creating a Summer Beet Salad recipe seemed like a no brainer.
It seems like beets go from barely there to sticking out of the ground within a matter of minutes. Outside of my herbs, they seem to be the first vegetable ready. Which is perfect for me because I am always anxiously awaiting their arrival.
As for cooking garden fresh beets, yes, they are a bit of a pain. Mainly because they make your hands and everything around you red! However, I love the recipe found on The Kitchen Garten to prepare ‘Easy Oven Roasted beets’ which you can locate here.
This Summer Beet Salad always receives so many compliments on how visually pleasing it is. However, it receives just as many compliments on how deliciously fresh it is!
Summer is my time to shine with fresh vegetables and fruit so a salad that incorporates both is perfection.
So go ahead and impress your guests at your next party with this Summer Beet Salad.
Ingredients
1 bunch beets (I used about 5 large and 4 small)
2-3 nectarines
Fresh parsley for garnish
Dressing
Balsamic reduction recipe – found on the Food Charlatan
Instructions
- Make balsamic reduction recipe according to recipe link
- Cut beets into a combination of coin shape for the larger ones and halved for the smaller ones.
- Cut nectarines into moon shape slices (approximately 8 slices per nectarine)
- Arrange on a large serving plate as desired (have fun with this part!)
- Add fresh parsley for garnish
- Drizzle balsamic reduction over the salad
- Chill until ready to serve!
