For years I have been making these protein bars but a chocolate version of them with this recipe here. However, it has never occurred to me to switch it up for vanilla. Which is shocking because vanilla is my all-time favourite flavour (sorry chocolate lovers!)
I love a nice simple and quick recipe like these Vanilla Protein Bars. They are healthy, vegan, gluten free, packed with protein and only contain 4 simple ingredients.
Here is what you will need:
- Food Processor
- Loaf pan
- Walnuts
- Pitted dates
- Vanilla
- Vanilla protein powder
It is amazing what these simple ingredients can create in a food processor!

I love munching on these bars between meals or just after a workout. Additionally, they are kid approved as mine can’t get enough of them.
Ingredients
- 1 cup walnuts
- 1 cup pitted dates
- 1 tsp vanilla
- 1 scoop vanilla protein powder
Instructions
- Add all ingredients to a food processor
- Blend until a dough-like consistency forms.
- Prepare a loaf pan with wax paper and add the mixture into the pan
- Firmly press the dough into pan ensuring it is smooth and even.
- Place in freezer for 20 mins or fridge for an hour to firm
- Remove from pan and carefully cut into individual bars making approximately 12.
- Store in a sealed container in fridge.
