I’ll admit, I am the queen of snacks. My family makes fun of me because I eat like a bird. I don’t eat much at once but I’m always eating. As a result, finding a healthy and hearty snack is a major success. Especially now with kids since their life is all about snacking.
This healthy peanut butter granola recipe is my all-time favourite. It offers vegan and gluten-free options, quick and easy to make and oh-so satisfying. What more could you ask for in a snack?
I love how versatile granola can be. Whether you are adding it to your yogurt or topping it on a smoothie, using it as cereal or just eating it straight-up, the options are endless!
Yet another good thing about granola is you can add any extras of your preference. For example, add some raisins, or chocolate chips or even an assortment of chopped nuts. Whichever way you like your granola, this Healthy Peanut Butter Granola recipe is a great foundation for granola making if you want to add or adjust it. However, it is still amazing just the way it is!
Healthy Peanut Butter Granola Ingredients
2 cup rolled oats (gluten-free if needed)
1 ½ cup rice cereal (I used coloured for the kids!)
½ tsp cinnamon
1/3 cup of applesauce or mashed banana
1/3 cup natural peanut butter
¼ cup honey (use maple syrup for vegan option)
1 tsp vanilla
Pinch of salt
½ cup of peanuts roughly chopped
Instructions
- Preheat oven to 325.
- Line cookie sheet with parchment paper
- Measure oats, cereal, and cinnamon in a large bowl, mix and set aside
- In a medium bowl whisk applesauce, peanut butter, honey, vanilla and salt
- Pour wet ingredients over dry ingredients and stir until evenly coated
- Spread mixture onto prepared cookie sheet
- Bake for 15 minutes
- Remove sheet from oven and stir peanuts into granola
- Bake for additional 10 minutes or until golden
- Let cool completely
- Store in a sealed container in the cupboard for up to 7 days
