These Crispy Chocolate Peanut Butter Squares are the perfect little dessert for the kiddos or even to have with coffee after dinner!
If you are like me, you like to have something sweet after dinner to cleanse your palate. Obviously, I steer clear of processed sugars especially in the after-dinner hours. Hence, this recipe came to be.
These Crispy Chocolate Peanut Butter Squares are free of refined sugars, vegan and gluten free. They are also no-bake, quick and easy as many of my recipes tend to be.
I love a good crunch in my dessert which this recipe provides. I like to use the Gluten-Free rice cereal here to create that perfect crunch.
In addition, to provide a vegan option to this recipe I love to use this vegan chocolate here for this recipe. No one ever notices the difference. Of course, you can use regular dark chocolate if you so choose.

Ingredients
4 ½ cups rice crisp cereal
½ cup honey (or vegan sweetener)
1 tsp vanilla
½ cup natural peanut butter
1/3 cup coconut oil (melted)
12 oz dark chocolate
Instructions
- Line 8-inch square pan with parchment paper.
- In a large microwave safe bowl add honey, vanilla, peanut butter, chocolate and coconut oil.
- Slowly heat in the microwave 30-40 seconds at a time stirring in between until it reaches a water like consistency.
- Add rice cereal to chocolate mixture and stir well until evenly coated.
- Firmly press the mixture into the prepared pan and refrigerate for about 1 hour until set.
- carefully cut into 16 squares and store in refrigerator for up to 7 days.
